Walter Station Brewery is part of this weekend's One Water Brewing Showcase, which serves beer made from recycled water.

Right now, one of the taps at Walter Station Brewery in Phoenix is serving a “unique” American pale ale.

“It’s got a nice light copper color to it,” said owner Jim Erickson after a pour. “That’s just from the ingredients that we use.”

The ale was made from recycled water. The city of Scottsdale gave a bunch of craft breweries hundreds of gallons of recycled water and asked them to make a beer for this weekend’s Canal Convergence festival

Erickson said beer is 90% water.

“It is the biggest resource that we use. So any opportunity we get to develop new methods of sustainability or protect that resource — we sort of need to jump on it,” he said.

Scottsdale recently got a permit to serve recycled water to people. The beer showcase, the city said, is “to help normalize public perception of direct consumption of recycled water.”
