The best kind of cooking changes with the seasons — and in Arizona, those seasons are a little different than they are on the East Coast.

So, while you might think about fall food and want to whip up a batch of pumpkin soup or bake some Thanksgiving pies, Brett Vibber wants to harvest acorns and cook fermented acorn miso.

Vibber is the chef of Wild Arizona Cuisine. He recently took over the restaurant at the Junipine Resort in Oak Creek. For him, fall food is all about what he can harvest from the land and what he can preserve as the weather turns cold in much of the state.

The Show spoke with him to learn what he thinks about fall food in Arizona.
